Queen of the Quickie
Right now, I am just in a hurry to go to bed. So before I finally doze off, let me share with you a quick fish dish that was our dinner a couple of weeks ago at a friend's house.
First, you need a pair of frozen dory or tilapia fillet, juice from 2 calamansi, some salt and pepper and a little pesto sauce.
Season the fish with the juice, salt and pepper, and pop in an oven (an oven toaster will do). Drizzle with a little oil (olive oil or any vegetable oil) and bake for about 15 minutes. (Fish is done when it turns white.) Transfer to a serving platter (skin side down if you used tilapia fillet) and spread about a teaspoon of pesto on top of each fish fillet.
Voila! A quickie recipe that you (or some unexpected guest) will surely enjoy!
PS: No oven? Just wrap the fish in foil and steam for 15 minutes. Unwrap, let cool and serve the same way.
